An owner of Henny Penny Cupcakes, the hen-themed eatery known for its cupcakes and soups, said she hopes to open the restaurant at a new location sometime next week.  

Penny Velk, who co-owns and operates Henny Penny’s with her husband, Michael, said they had initially scheduled to open the new shop Tuesday of this week, but delays caused by needed construction prevented them from doing so.

She said the decision was made in January to leave the two-story, Third Avenue address where the Velks launched their business about four-and-a-half years ago for a larger space at 234 Fourth Ave., across the street, west of the Independence Bank Parking lot.

Velk said the former location was about 18-by-50 feet, and the dining room alone at the new location is larger at 23-by-50 feet.  

“So we will have a dining area, a kitchen area, accessible bathrooms and everything is all on one level,” she said, adding that the new store will also have an expanded menu that will include sandwiches and salads.

Velk said that she might also have to add to her staff to meet the needs of the new shop.
